Chunky Triple Chocolate Chip Cookies

Cookie cookie cookie! No one can resist a cookie and biscuit when freshly baked and left on the side in the kitchen, the smell is heavenly. I decided to bake triple chocolate chip cookies as chocolate never fails to make anything taste good (I hoped). Here is a recipe for big, chubby, chunky cookies adapted from here.

You will need:
250g plain flour
200g dark brown soft sugar
100g caster sugar
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
170g unsalted butter
1 tablespoon vanilla extract
2 eggs
300g chocolate chips

Pre-heat the oven to 190C/fan 170C/gas 3 and grease or line baking trays. The number of baking trays you need depends on how big your trays are and your desired size of cookies, I ended up using three trays a couple times. Sift together the flour, bicarbonate of soda and salt and set aside.


Melt the butter in a bowl over a saucepan with water on medium heat. 


Mix together the melted butter, brown sugar and caster sugar until well blended.


Mix the vanilla extract, egg and egg yolk by hand (using just an egg yolk is tricky) and blend into the buttery, sugary mixture. Then mix in the sifted ingredients until just blended.


Using a wooden spoon, stir in the chocolate chips (whatever flavour and size you like).


Drop cookie dough onto the baking trays using a tablespoon without flattening the dough, a good tablespoon of dough produces these chunky cookies below. You can make your cookies bigger or smaller as long you leave a big enough gap between the cookie dough so they can expand and adjust the baking time (a little experimenting will be needed). I baked my cookies for roughly 7-10 minutes so that they soft and cake like.


You can add chocolate chips or hearts on top of the cookie dough on your baking tray before baking for decoration.
